I have to share another culinary find. Blue potatoes (well, purplish looking until you boil them.) I was in the throws of desiring potato salad and grabbed some mini-potatoes from the refrigerator I'd been reluctant to try because of their color. They came combined in a package called "Mini Medley Potatoes" combined with white and red mini potatoes I'd already used and were starting to look like I was intending to let the purple ones whither away. Nope! Waste not...want not.
I dutifully boiled my potatoes and eggs. Then I popped them into the refrigerator to cool. At dinner time I peeled the purple potatoes to reveal this lovely blue colored, perfectly firm potato that holds up beautifully in a potato salad. Adding in the eggs, onion, celery seed, pickles and mayonnaise, I stirred up the most delicious version of potato salad I've made in ages. Jim was even impressed as he too had been skeptical about eating "blue" potatoes.
So the next time you see these in the gourmet section or bagged with red and white potatoes, give them a try. I'd love to hear what you think of them and hear about any ideas you have for other dishes made with them. I have already picked up another bag and I think I'll try blue mashed potatoes. More on that later!
Not sure I like blue food.
