We've left Paso Robles and now we are sixty miles up the road at an RV resort called "Yanks"-I'll let Mom tell you about that. Tomorrow we go to Monterey. So far I have enjoyed our trip through the "Wine Corridor" of California's Central Coast. It has inspired Mom to do some "gourmet cooking" as she calls it. (I'll stick to my Fancy Feast!)
Anyway, she made a vegetarian meal the other night. I think she was really using up most of the veggies in the refrigerator. But when she was done, she told Dad "It is possible to do creative cooking in an RV!" Did you know you can do roasted orange peppers in a convection microwave? Well you can. She made a carrot and turnip combination that was supposed to fool Dad into thinking he got orange colored mashed potatoes. He actually liked them. Plus there was cole slaw with homemade dressing. Fresh mozzarella cheese, sliced tomato and steamed green beans were the easy part she said. Mom was on a roll.
Actually, I thought the best part was what happened to the kitchen counter. Wow! But you can whip up a fancy meal on two square feet of counter space. Well, I am going to pretend I am an elephant seal laying on the beach and take a nap after all this hard work of typing.
