Healthy Eating is Possible

Eating healthy foods on the road in an RV is remarkably easy.  Fruits and vegetables are something I can pickup every three or four days at the grocery or in a farmer's market.  They keep well traveling in either the refrigerator or alternatively when placed down in one of the two basins making up our kitchen sink in the coach.  The sink corrals these items and keeps them from rolling around as we go down the road.  Traveling requires planning ahead to account for the motion of the road obviously, so there is no storage on the counter as we go along.
That being said, this year I am trying a new cooking system called “induction cooking”-for example when warming up a quick bowl of oatmeal first thing in the morning.  It is easy to just pull out the induction hotplate and using the type of pan that works with the induction system you have hot oatmeal in mere minutes.  A hotplate type option works well to save opening up the entire propane range for a quick cooking activity. (Normally, you take off a panel that looks like a countertop when it is in place that covers the propane range and thus with the hotplate we gain more counter space to boot!)  
Last night we gained a coupon for three dollars off of a meal at Olive Garden from the Inn and Out RV Campground where we stayed.  The coupon tempted us (as it was meant to do) to stroll over for dinner.  As usual “The Tour of Italy” meal was a winner for both of us.  I have a pound of weight back on to prove it!  But sometimes it is just nice to let “Jim do the cooking,” as he likes to call eating out.

Lake City can be noted for sightings of Mockingbirds and Ibis just outside of our coach in the park were we stayed last night.  Now that we are back in the RV mode, I am seeing lots of dogs, too.  I think three quarters of the RVs going down the road have a dog or two or even three!  Well, there are a few cats, but I fear we are outnumbered.  Mom bought me a catnip bird toy that we have discovered chirps as we drive down the road.  Riding in my bed, the motion of the coach gets my toy singing every so often.  I rather like it!
