Dreams of Waffles

When we recently stayed in the RV park in Santa Barbara (Santa Barbara Sunrise RV Park) we enjoyed the company of its park managers, Terry and Debbie.  They made the experience of staying in the park extra special because we were able to spend some time with them talking about subjects other than just inspections and advertising.

This is where I heard the story of their son Ryan, who dreams of owning a food truck that sells Stuffed Waffles.  He's back on the East Coast somewhere.  Food trucks are apparently becoming very chic these days everywhere.  They are very prevalent here in California.  I suspect they are evolving as a popular alternative for food-on-the-go as opposed to the ever present fast food burger drive-ins.

Here's how it works...make a waffle (not the thick Belgian version, but the thinner style.)  Ryan prefers a vanilla flavored waffle.  Then add one of the following fillings:
  • lemon curd and whipped cream
  • bacon and maple syrup
  • ham and cheese
  • bacon, sausage and ham
  • peanut butter and jelly (raspberry jam is preferred by Ryan)
After garnishing the waffle with one of the above, fold the waffle in half over the filling and wrap a piece of aluminum foil around the waffle folding the foil up around the bottom so the filling doesn't drip out on you.  And there you have it.  A portable waffle that is yummy!  I can't wait to try one-the lemon curd and whipped cream version calls out to me.  I suspect fresh fruit and whipped cream would be good too.

Don't need to be on the go?  Well, consider making your own (you could even slice a Belgium waffle in half if that's the only style waffle maker you have) and fill it with one of the above combinations. Then sit down to a an exciting alternative to oatmeal.  When I make one or find one, I'll post a photo for you!
